these are honestly so yummy, and so healthy – cucumber makes such a great alternative for ” crackers ” that you would normally eat this way – so light tasting, and so fresh! I ate these after a great upper body workout 🙂
I love making simple, healthy things to eat – i have a busy schedule so don’t really have a lot of time to put a whole bunch of effort into my meal prepping so i like to keep it easy but healthy!!
These tuna cucumber bites are perfect for lunch or post-workout snack 🙂
RECIPE:
1 can of tuna ( i prefer light tuna water packed with less salt )
cucumber ( you slice up as many as you want )
1/3 cup of chopped red onion ( i love the flavour )
1/3 cup of coconut oil mayo (homemade)
mix ingredients until well mixed
scoop tuna onto cucumber slices, sprinkle pepper (if you want) & enjoy 🙂
